choucroute Strasbourgeoise

I had the opportunity to go to Strasbourg for a short visit and when I arrived, it was pouring with rain so my friends, Phillipe and Maria Luisa and I just went next door to Le Dix,  for dinner. I was staying at the Ibis Gare Central. I had the choucroute trois poissons which was good but I forgot to take a photo. The photo above is taken another day when I had it in the classic choucroute Strasbourgeoise. Needless to say, I love choucroute or as is known also as sauerkraut but I would only eat the French version.

Cabbage takes on a totally different texture and taste. To be honest I do not care so much for the garnish – be it meat of fish, its the choucroute I’m after. It must not be too salty but have a certain melting sumptiousness. When I used to cook it at home – when home was Strasbourg – I used to add a generous dollop of the kirsch and juniper berries.
